  • 1 1/2 tbsp vegetable oil
  • 3/4 pound cubed beef stew meat
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 2 tbsp all-purpose flour
  • 1 (28 ounce) can diced tomatoes
  • 1 (16 ounce) can black beans, rinsed and drained
  • 1 (16 ounce) can kidney beans, rinsed and drained
  • 1 3/4 cups beef broth, divided
  • 1 large onion, chopped
  • 1 small green or red bell pepper, chopped
  • 1/4 cup chopped fresh parsley
  • 2 tbsp barbeque sauce
  • 1 1/2 tbsp brown sugar
  • 2 cloves garlic, or more to taste, minced
  • 3/4 tsp salt

Cooking recipe

Step 1: Heat oil in a large skillet over medium-high heat. Add stew meat and brown for 2 minutes, stirring often. Add chili powder and cumin then cook and stir until fragrant, about 1 minute. Stir in flour and cook for 1 minute more. Move the meat to a large slow cooker.

Step 2: Add diced tomatoes, black beans, kidney beans, 1 1/2 cups beef broth, onion, bell pepper, parsley, barbecue sauce, brown sugar, garlic, and salt to the slow cooker. Stir them until well combined.

Step 3: Cover and cook on Low mode, stirring occasionally, until beef is tender, about 6 to 8 hours. If consistency is too thick, thin down the chili with remaining beef broth as it cooks.

  • 1 lb stew meat
  • 1 lb ground beef
  • 1 onion, large, diced
  • 6 cloves garlic, diced
  • Jalepeno, diced
  • Green pepper, diced
  • Cilantro
  • 18 oz tomato sauce
  • 18 oz diced tomatoes
  • 18 oz pinto beans
  • 18 oz navy beans
  • 1 tsp cumin
  • 1 tbsp chili powder
  • Salt and pepper
  • 1 malty beer or beef stock

Cooking method

Step 1: In a large Dutch oven, brown ground beef on medium-high heat.
When beef is browned, remove and set aside.

Step 2: Add the stew meat in until they brown, turning to be sure it cooks evenly. Remove stew meat when browned. Do not drain fat.

Step 3: Add onion, garlic, jalapeno, pepper and beans to the pot. Cook on medium-high heat until they soft.

Step 4: Add meat back to the pot; add spices, diced tomatoes and stir well to combine. Add in spices and beer or stock then stir. Cover with lid and simmer on low heat for 1 hour.

  • 4 tbsp olive oil
  • Salt and pepper
  • 2 lbs beef stew meat
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 jalapeno finely diced
  • 1/4 cup chili powder

  • 1 28oz can diced tomatoes
  • 2 14.5oz cans chili beans
  • 2 cups dark beer
  • 2 cups beef stock

Step 1: Season stew meats with salt and pepper. Heat 2 tbsp olive oil in a large Dutch oven over medium heat. Add stew meat in small batches; be careful not to crowd the pan. Brown the meats on all sides, remove from pan and repeat with remaining meats until all meats are browned.

Step 2: Heat the remaining of 2 tbsp olive oil in the Dutch oven. Add onion, garlic and jalapeno. Stir frequently until the onion softens.

Step 3: Return the meats to the pan and add remaining ingredients. Bring mixture to a boil. Reduce heat and simmer for at least 1 hour or until the mixture thickens. The longer the chili simmers, the better the flavor becomes.

Step 4: Serve with shredded cheese, avocado, sour cream or any topping of your choice.

  • 1 tbsp olive or vegetable oil
  • 1 medium green bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 2 ribs celery, chopped
  • 1 clove garlic, finely chopped
  • 1 lb ground beef (85% lean)
  • 2 tbsp chili powder
  • 1 1/2 tsp salt
  • 1/2 tsp oregano
  • 3 tbsp tomato paste
  • 1 (14-ounce) can diced tomatoes
  • Water or broth, as needed to make 1 cup liquid with the tomato juices
  • 1 (15.5-ounce) can kidney beans, drained and rinsed
  • 1 cup shredded cheese, any favorite mix, to serve
  • 2 green onions, sliced thinly, to serve
  • Rice, cornbread, or garlic knots, to serve

Cooking method

Step 1: Select the Sauté mode on your instant pot and add the oil to the pot. (If you are using a stovetop pressure cooker, heat the oil over medium heat.) Add the bell pepper, onion, celery, and garlic. Sauté until the onions are softened and translucent, about 5 minutes.

Step 2: Add the ground beef to the pot, breaking it up in small pieces. Cook until no longer pink, about five minutes.

Step 3: Add the chili powder, salt, oregano, and tomato paste to the pot. Stir until the tomato paste is evenly mixed into the other ingredients and no clumps remain.

Step 4: Strain the tomatoes, then add enough water or broth to make 1 cup of liquid. Add the liquid, the strained tomatoes, and the beans to the instant pot.

Step 5: Put the lid on the pressure cooker. If you are using an instant pot, select the “Chili” mode, then adjust the time to 20 minutes. If your pressure cooker does not have a “Chili” mode, set it manually to “High Pressure” for 20 minutes. For stovetop pressure cookers, cook for 17 minutes at high pressure.

It will take about 10 minutes for your pressure cooker to come up to pressure. Total time from the time you seal the pressure cooker to the finished dish is about 30 minutes.

Step 6: When the timer goes off, you can perform a quick pressure release by moving the pressure release knob from “Sealing” to “Venting,” or let the pot depressurize naturally on its own (this takes about 20 minutes). For stovetop pressure cookers, perform a quick pressure release.

Step 7: Top bowls of chili with shredded cheese and green onions if needed. Serve with rice or with cornbread.
