  • 1/4 cup kosher salt

  • 1 teaspoon black peppercorns
  • 1 dried bay leaf
  • 1 sprig fresh rosemary

Bring it to a simmer over high heat. You do not need the water to boil rapidly but you need to make sure the salt and sugar have dissolved in the water.

Remove the pot from the heat and cool completely. Once the brine is cool, add the pork chops to a large zip-top bag and pour in the brine.

Let the pork brine in the refrigerator for 2-4 hours.

  • 4 boneless pork chops 1 inch thick
  • 4 tablespoons extra virgin olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper

  • 2 center-cut, bone-in pork chops, 1 1/2–2 inches thick

  • 6 cups cold water
  • 1/3 cup Diamond Crystal kosher salt, or 1 3/4 ounces other kind of salt
  • 3 tablespoons granulated sugar (optional)
  • 4 boneless or bone-in pork chops (at least 1-inch thick)
  • 1 teaspoon freshly ground black pepper or salt-free spice or a dry rub
  • Optional brine flavorings: 4 strips citrus peels, 4 smashed garlic cloves, 1 teaspoon dried or fresh herbs or whole spices, or 2 bay leaves

Cooking method

Step 1: Make the brine. Place 6 cups cold water, 1/3 cup kosher salt, and 3 tablespoons granulated sugar and flavorings if using in a large bowl. Whisk until the salt and sugar are dissolved.

Step 2: Brine for 30 minutes to 2 hours. Add 4 pork chops and make sure they are completely submerged. Cover and refrigerate at least 30 minutes or up to 2 hours.

Step 7: Rest the pork chops for 5 minutes. Transfer the pork chops to a serving platter, cover loosely with aluminum foil, and let rest at least 5 minutes before serving.
