What is keto?

A “keto” or “ketogenic” diet gets its name from the fact that it allows your body to generate tiny fuel molecules known as “ketones”. This is a different fuel source for the body and can be used when blood sugar (glucose) is down.

When you eat too little carbohydrates or calories, the liver converts fat into ketones. These ketones are then used as a fuel source in the body, especially in the brain. The brain is a starving organ that absorbs a lot of energy every day and cannot function directly on fat. It can only be driven by glucose or ketones.

In a ketogenic diet, the whole body changes its food source to work mostly on sugar, burning fat all day. When insulin levels are extremely low, fat burning can skyrocket. It gets easier to gain access to the fat reserves in order to cook them down.

This is fantastic if you’re looking to lose weight, but there might be other advantages as well, such as reduced hunger and a consistent source of energy — without the sugar highs and valleys that frequently arise while consuming high-carb meals. This can assist you in remaining alert and concentrated.

The body reaches a physiological cycle known as ketosis when it releases ketones. Fasting—not eating anything—is the quickest way to get there, but no one can reliably fast indefinitely.

Beef is clearly a stewing favorite, and this is due to the fact that it can be slow-cooked and simmered in rich sauces and gravies. However, in order to bring out the flavor and tenderness of the beef by stewing, you have to first decide on the kind of beef to use.

Chuck is the finest cut of beef for beef stew! Buy a thick chuck roast and cut it into chunks for the most tender flavor. Chuck roast is a tougher cut of meat than sirloin or rib roast, and it benefits immensely from pressure or slow cooking to make the best beef stew! Pressure frying or slow cooking breaks down stiff fibers, resulting in juicy beef that melts in your mouth.

Aside from that, what makes chuck the finest beef stew meat? The secret is collagen, which keeps beef moist and tender when grilled. The more collagen there is in a muscle, the stronger. Chuck, on the other hand, supports a significant amount of body weight, making them extremely heavy, collagen-rich, and unquestionably tough.

Not a fan of chuck? There are more options for your choice:

  • Short ribs: Short rib is the best choice for thickness and taste consistency, but it’s also the most expensive. Short ribs are more expensive than chuck, and you should bear in mind that bone weight is often considered, but they have a rich beefy flavor.
  • Bottom Sirloin Flap: Bohemian is juicy but chewy, like a cross between a hanger steak and a short rib. Take this one into your ingredient list if you like rich beefy taste and don’t mind chewing a little.
  • Fatty brisket: Brisket, which is sliced from the breast and has a natural layer of fat and marbling in the beef, is a cost-effective and tasty cut. Slow cooking allows the meat to fall off the bone, and the cooking juices give your beef stew a rich taste.

Beef stew is one of those dishes that can be prepared in a variety of ways. You can cook it in a skillet or a crock pot, but Instant Pot can be an ideal option to save your time.

  • Clarified butter (ghee)
  • Grass-fed beef chuck steak
  • Onion
  • Carrot
  • Parsnip
  • Mushrooms
  • Garlic
  • Dry red wine
  • Water or low-sodium beef stock
  • Tomato paste
  • Grass-fed beef gelatin
  • Dried Italian herb mix
  • Salt
  • Black pepper
  • Fresh thyme, for garnish (optional)
  • Cauliflower mash, for serving (optional)

  • Click “Sauté” on the instant cooker and wait 2 minutes for it to heat up. Cook until the ghee has dissolved, and the beef is seared, around 3 to 5 minutes, tossing halfway through. Place the beef in a dish. (If you don’t want to overcrowd the pot, sear the beef in two batches.)
  • Add the cabbage, carrot, parsnip, and mushrooms, along with the remaining 2 teaspoons ghee. Cook, stirring constantly, for around 2 minutes, or until the vegetables have taken on a little color. Cook, stirring continuously, for another 30 seconds after adding the garlic. Cook for 1 minute after adding the red wine, picking up any brown bits from the bottom of the oven. To end the sautéing, press the “Cancel” button.
  • Add the meat, water, tomato paste, beef gelatin, Italian herb seasoning, salt, and black pepper back to the cooker. Set the instant cooker to Manual, High Pressure for 35 minutes, then let it naturally release for 10 minutes before quick-releasing the pressure.
On top of the cauliflower mash, garnish with new thyme.

Beef stew is traditionally made with carrots and potatoes. Potatoes are a high-carb starch that works well for thickening stews but not so well for maintaining ketosis. To make a standard beef stew keto friendly, we need a few modifications.

  • 1 pound stew meat
  • 1/2 tsp sea salt
  • 1 tsp pepper
  • 1/2 onion chopped
  • 1 tsp garlic minced
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1/4 tsp xanthan gum
  • 1 carrot rough chopped
  • 2 tbsp olive oil
  • 1/2 cup radishes quartered
  • 4 oz crimini mushrooms quartered
  • 2 bay leaves
  • 1/4 tsp thyme dried
  • 1/2 cup green beans cut to 1 inch pieces

  • In a stew pot, heat the oil over medium-high heat. Brown stew meat in oil after seasoning it with salt and pepper. Add onions, garlic, and tomato paste after the meat has a strong sear. To keep the garlic and tomato paste from burning, stir continuously for one minute.
  • Reduce heat to medium and add one cup of broth to deglaze the bottom of the pot, adding more if necessary.
  • Whisk xanthan gum into 1 cup of broth. Add all remaining broth, vegetables, and spices to the pot and bring to a boil. Reduce the heat to low and cover. Cook for 45 minutes on low heat.
  • Remove the cover and continue to cook on low for another 15 to 30 minutes, stirring regularly. The more you leave it to boil, the thicker it will get.
  • Serve the food. If needed, garnish with fresh chives.
