Keto beef stew instant pot recipe
Beef stew is one of those dishes that can be prepared in a variety of ways. You can cook it in a skillet or a crock pot, but Instant Pot can be an ideal option to save your time.
- Clarified butter (ghee)
- Grass-fed beef chuck steak
- Dry red wine
- Water or low-sodium beef stock
- Tomato paste
- Grass-fed beef gelatin
- Dried Italian herb mix
- Black pepper
- Fresh thyme, for garnish (optional)
- Cauliflower mash, for serving (optional)
- Click “Sauté” on the instant cooker and wait 2 minutes for it to heat up. Cook until the ghee has dissolved, and the beef is seared, around 3 to 5 minutes, tossing halfway through. Place the beef in a dish. (If you don’t want to overcrowd the pot, sear the beef in two batches.)
- Add the cabbage, carrot, parsnip, and mushrooms, along with the remaining 2 teaspoons ghee. Cook, stirring constantly, for around 2 minutes, or until the vegetables have taken on a little color. Cook, stirring continuously, for another 30 seconds after adding the garlic. Cook for 1 minute after adding the red wine, picking up any brown bits from the bottom of the oven. To end the sautéing, press the “Cancel” button.
- Add the meat, water, tomato paste, beef gelatin, Italian herb seasoning, salt, and black pepper back to the cooker. Set the instant cooker to Manual, High Pressure for 35 minutes, then let it naturally release for 10 minutes before quick-releasing the pressure.
On top of the cauliflower mash, garnish with new thyme.
Keto beef stew with radishes
Beef stew is traditionally made with carrots and potatoes. Potatoes are a high-carb starch that works well for thickening stews but not so well for maintaining ketosis. To make a standard beef stew keto friendly, we need a few modifications.
- 1 pound stew meat
- 1/2 tsp sea salt
- 1 tsp pepper
- 1/2 onion chopped
- 1 tsp garlic minced
- 1 tbsp tomato paste
- 4 cups beef broth
- 1/4 tsp xanthan gum
- 1 carrot rough chopped
- 2 tbsp olive oil
- 1/2 cup radishes quartered
- 4 oz crimini mushrooms quartered
- 2 bay leaves
- 1/4 tsp thyme dried
- 1/2 cup green beans cut to 1 inch pieces
- In a stew pot, heat the oil over medium-high heat. Brown stew meat in oil after seasoning it with salt and pepper. Add onions, garlic, and tomato paste after the meat has a strong sear. To keep the garlic and tomato paste from burning, stir continuously for one minute.
- Reduce heat to medium and add one cup of broth to deglaze the bottom of the pot, adding more if necessary.
- Whisk xanthan gum into 1 cup of broth. Add all remaining broth, vegetables, and spices to the pot and bring to a boil. Reduce the heat to low and cover. Cook for 45 minutes on low heat.
- Remove the cover and continue to cook on low for another 15 to 30 minutes, stirring regularly. The more you leave it to boil, the thicker it will get.
- Serve the food. If needed, garnish with fresh chives.
How to thicken beef stew
If you want to thicken a typical beef stew, you can use flour or cornstarch. We won’t use any of those ingredients because we want this to be a low-carb beef stew.
