How to eat branzino – Eat the whole fish
The fact is that many people eat branzino in the wrong way. So how to eat branzino properly? The most common way is to eat it whole except for some part of the head and tail.
Step 1: You can start with the head. You won’t eat the majority of this section, but the areas around the cheek and collar of the fish are very flavorful and sweet. Branzino is known for its meat, which is described as being sweet.
Step 2: Now move onto the body. Branzino has a large tail that it can be used as a grip. Use it to stabilize your fish on the plate.
Start by pulling the dorsal and ventral fin bones from the fish. Cut along the fillet in the place where the head meets the collar bone, slicing through the skin and flesh down to the bone. Then cut through the skin where the fillet meets the tail.
Step 3: Cut through the fillet, following the natural division that runs along the spine of the fish. Just follow the division until you’ve gone all the way from the head to tail.
Step 4: Use your utensils to push the fish back in one piece, bit by bit, until it’s completely off the bone, and set it to the side. Check for any bones that might still be attached and remove them.
Next, push the belly half of the top fillet off the fish, and flip it over, skin side down. Scrape away any bones and membranes from the inside of the cavity.
Step 5: Grab the tail and lift it free from the fillets below. The bone cage should come up with it, leaving the bottom fillet behind. The head usually comes off with the spine.
Step 6: Using your utensils, scrape away any membranes on the bottom fillet, and remove any bones.
Step 7: For a bit of extra flavor, you can use a squirt of lemon on the meat of the branzino to accentuate the flavor of the fish and serve.
How long does cooked branzino last in the fridge?
Cooked branzino can last for an absolute maximum of up to 3 days in the fridge, according to the USDA.
The secret to leftover fish lasting up to 3 days after being cooked, is the quality of the fish. If the fish was of very high quality, to begin with, before being cooked, (ie: freshly harvested, firm skin, doesn’t have any sort of foul odor or off-gassing of ammonia) then it should last in the fridge for 2-3 days. But always make sure to eat it within 3 day maximum.

You may find branzino under the name European bass. It’s farmed in many regions around the world. You can also buy wild-caught branzino though it’s now becoming harder to find because of overfishing.
